Cajun Tofu Scramble



  • 1 pack Vegie Delights Bacon Style Rashers
  • 2 tablespoons olive or coconut oil
  • 1/2 small red onion
  • 1 can corn
  • 120g baby spinach
  • 200g silken firm tofu
  • 1/2 teaspoon Cajun spice mix
  • 1/2 avocado, peeled and sliced
  • Pinch chilli flakes
  • Sea salt and black pepper


  1. Heat frypan on medium heat, add 1 tablespoon olive or coconut oil as well as onion and cook for 3 minutes or until translucent, then add corn and spinach and cook for a further 2 minutes. Remove from pan, cover and set aside to keep warm.
  2. Add another teaspoon of oil to the pan, and in half the pan cook the vegie delights bacon style rashers for2-3 minutes. On the other side of your pan add the tofu, sunflower seeds and ca jun spice mix and lightly mix around the pan to scramble together for 2-3 minutes.
  3. Serve by dividing Vegie Delights Bacon-Style Rashers and tofu scramble between two serving plates with sautéed corn and spinach. Add avocado slices, pinch of chilli flakes if desired, season with sea salt and black pepper and serve with lime or lemon wedges.
