- 1 pack Vegie Delights™ Vegie Hot Dogs
- 1 tbs mirin
- 1/4 cup less salt soy sauce
- 2 tbs honey
- 2 tbs water
- 1 clove garlic, minced
- 1 tbs sesame seeds
- 1 tbs vegetable oil
- 3 heads bok choy, chopped
- 1 yellow or red capsicum, thinly sliced
- 1 carrot, thinly sliced
- 600 g fresh hokkien noodles
- Slice the Hot Dogs on an angle into 1 cm pieces. Soak noodles in boiling water for 2 - 3 minutes – rinse with cool water, drain, and gently separate.
- Combine the mirin, soy, honey, water, garlic, and sesame seeds in a small bowl. Stir well.
- Drizzle half the oil into a wok or large skillet over high heat. Add carrots and capsicum, and stir fry for 3 - 4 minutes, until veggies are just charred on the edges.
- Add remaining oil and Vegie Hot Dog pieces to the wok. Cook for a further 3 minutes, stirring / tossing regularly. Add bok choy and toss to just combine.
- Pour sauce mixture into the pan and stir well. Cook for a minute or two, until sauce begins to bubble.
- Add noodles and toss to evenly coat. Cook for a final minute, until noodles are heated through. Serve immediately.
