  • 1 pack Vegie Delights™ Vegie Hot Dogs
  • 1 tbs mirin
  • 1/4 cup less salt soy sauce
  • 2 tbs honey
  • 2 tbs water
  • 1 clove garlic, minced
  • 1 tbs sesame seeds
  • 1 tbs vegetable oil
  • 3 heads bok choy, chopped
  • 1 yellow or red capsicum, thinly sliced
  • 1 carrot, thinly sliced
  • 600 g fresh hokkien noodles
  1. Slice the Hot Dogs on an angle into 1 cm pieces. Soak noodles in boiling water for 2 - 3 minutes – rinse with cool water, drain, and gently separate.
  2. Combine the mirin, soy, honey, water, garlic, and sesame seeds in a small bowl. Stir well.
  3. Drizzle half the oil into a wok or large skillet over high heat. Add carrots and capsicum, and stir fry for 3 - 4 minutes, until veggies are just charred on the edges.
  4. Add remaining oil and Vegie Hot Dog pieces to the wok. Cook for a further 3 minutes, stirring / tossing regularly. Add bok choy and toss to just combine.
  5. Pour sauce mixture into the pan and stir well. Cook for a minute or two, until sauce begins to bubble.
  6. Add noodles and toss to evenly coat. Cook for a final minute, until noodles are heated through. Serve immediately.
