Meatballs and Zoodles



  • 1 pack of Vegie Delights Meatless Meatballs
  • 1 Tbsp of olive oil
  • 1 onion, finely diced
  • 2 cloves of garlic, crushed
  • 1 ΒΌ cups of tomato paste
  • 1 cup of vegetable stock
  • 2 large zucchinis, spiralized
  • 1 Tbsp thyme leaves, to garnish
  • Sea salt and pepper
  • Optional: Vegan friendly cheese of your choice, grated to garnish


  1. Cook Vegie Delights Meatless Meatballs as per cooking instructions.
  1. Heat oil in a frypan over medium heat, add onion and garlic and cook for 1 min. Mix in tomato paste and stock and bring mixture to the boil. Season with salt and pepper. Add meatless meatballs.
  1. Pour boiling water over zucchini noodles (zoodles), let sit for 1 min, then drain.
  1. Top zoodles with meatless meatballs in tomato sauce and garnish dish with thyme leaves and grated vegan friendly cheese of your choice.
