Plant-Based Parmigiana

  • 1 pack Vegie Delights Tender Crumbed Schnitzel
  • 50g baby spinach
  • 1 cup chunky vegetable pasta sauce
  • 40g vegan cream cheese
  • 4 slices vegan mozzarella
  • 2 tsp mixed Italian seasoning
  • 4 tbsp vegan grated parmesan


  • Salad or salad greens


  1. Preheat oven to 180C fan-forced. Line a baking tray with baking paper. Place the schnitzels on the paper-lined tray and bake for 6 minutes.
  2. Remove from oven and turn the schnitzels over. Top each with baby spinach, pasta sauce, cream cheese, mozzarella, sprinkle with herbs and parmesan.
  3. Return tray to oven and change the setting to grill. Cook for 7 minutes or until the cheese is melted and golden.
  4. Serve with your favourite side salad or salad greens.
