Spicy Eggplant & Lentils

Ingredients
415g can Vegie Delights Savoury Lentils
1 eggplant, diced
2 Tbsp of olive oil
1 onion, chopped
3 garlic cloves, chopped
1 red chilli, chopped
1 red capsicum, diced
400g can diced tomatoes
1 tsp of cumin, ground
1 tsp of coriander, ground
½ tsp of cinnamon, ground
1½ tsp of smoked paprika, ground
Salt and pepper
Fresh mint
Couscous, cooked
Method
Preheat oven to 200°C
Toss eggplant in 1 Tbsp of oil, salt and pepper. Bake for 30 mins or until tender
Heat remaining oil in pan. Add onion, garlic, chilli and capsicum. Cook until soft
Add cumin, coriander, cinnamon, smoked paprika and tomatoes.
Simmer for 15 mins
Add Vegie Delights Savoury Lentils and cook for another 5 mins
Stir through eggplant and season with salt and pepper
Serve with couscous and garnish with mint
