- 2 tbs olive oil
1 pack Vegie DelightsTM Smokey BBQ Burgers
4 wholemeal English muffins
1 tbs hollandaise sauce
1 avocado, peeled and lightly mashed
4 slices reduced fat cheddar cheese of choice
1 medium tomato, sliced
1 cup rocket
- Preheat frypan or BBQ to medium heat and add half the olive oil. Cook burgers according to packet directions. Remove from heat.
- Add remaining olive oil to pan. Crack eggs onto pan when hot and cook for a couple of minutes or until your liking.
- Slice each muffin in half and toast. Spread one side of each muffin with sauce.
- Assemble burgers with all the ingredients, finishing with the rocket and serve immediately.
