  • 2 tbs olive oil
  • 1 pack Vegie Delights™ Smokey BBQ Burgers
  • 4 wholemeal bread rolls
  • 2 tbs sriracha mayonnaise

Slaw:

  • ¼ red cabbage, shredded
  • 1 fresh beetroot, peeled and julienned
  • 2/3 granny smith apple, julienned
  • ¼ cup fresh parsley leaves
  • ¼ cup fresh coriander leaves
  • ¼ cup fresh mint leaves
  • ½ fresh lemon, zest and juice
  • 1 tbs olive oil
  • Freshly ground black pepper to taste
  1. Place all ingredients for the slaw in a medium bowl and stir thoroughly. Put aside.
  2. Preheat frypan or BBQ plate to medium heat. Add oil and cook burgers 10-12 minutes, turning halfway. Remove from pan. Add rolls to pan and lightly toast.
  3. Lightly toast rolls and spread with sriracha mayonnaise.
  4. Top base of bread roll with slaw, then a burger patty. Add a drizzle of sriracha and season with black pepper. Add roll lid, serve hot and enjoy.

Use leftover slaw for lunches the day after
