- 2 tbs olive oil
- 1 pack Vegie Delights™ Smokey BBQ Burgers
- 4 wholemeal bread rolls
- 2 tbs sriracha mayonnaise
Slaw:
- ¼ red cabbage, shredded
- 1 fresh beetroot, peeled and julienned
- 2/3 granny smith apple, julienned
- ¼ cup fresh parsley leaves
- ¼ cup fresh coriander leaves
- ¼ cup fresh mint leaves
- ½ fresh lemon, zest and juice
- 1 tbs olive oil
- Freshly ground black pepper to taste
- Place all ingredients for the slaw in a medium bowl and stir thoroughly. Put aside.
- Preheat frypan or BBQ plate to medium heat. Add oil and cook burgers 10-12 minutes, turning halfway. Remove from pan. Add rolls to pan and lightly toast.
- Lightly toast rolls and spread with sriracha mayonnaise.
- Top base of bread roll with slaw, then a burger patty. Add a drizzle of sriracha and season with black pepper. Add roll lid, serve hot and enjoy.
Use leftover slaw for lunches the day after
