2 tbs olive oil
1 pack Vegie DelightsTM Smokey BBQ Burgers
4 wholemeal bread rolls
2 tbs sriracha mayonnaise
Slaw:
¼ red cabbage, shredded
1 fresh beetroot, peeled and julienned
2/3 granny smith apple, julienned
¼ cup fresh parsley leaves
¼ cup fresh coriander leaves
¼ cup fresh mint leaves
½ fresh lemon, zest and juice
1 tbs olive oil
Freshly ground black pepper to taste
- Place all ingredients for the slaw in a medium bowl and stir thoroughly. Put aside.
- Preheat fry pan or BBQ plate to medium heat. Add oil and cook burgers according to pack directions. Remove from heat.
- Lightly toast rolls and spread with sriracha mayonnaise.
- Top base of bread roll with slaw, then burger patty. Season with pepper and close with the roll lid.
- Serve hot and enjoy.
Use leftover slaw for lunches the day after
