1 tbsp olive oil
1 onion chopped
2 cloves of garlic, crushed
6 Vegie Delights™Chicken Style Sausages, sliced
1 red capsicum, chopped
250g cherry tomatoes, halved
1 tin no added salt chopped tomato
2tbsp drained capers
100g pitted Kalamata olives
1 tsp of dried mixed herbs
300-400g cooked wholemeal pasta
fresh basil leaves chopped to serve
- Heat the olive oil in a large pan and sauté the onion and garlic for a few minutes until softened.
- Add the vegie sausage slices, capsicum and cherry tomatoes and fry for a few minutes so that the vegie sausage slices are browned slightly.
- Add the tinned tomatoes, capers, olives and dried herbs and simmer for 15 - 20 minutes, so that the sauce reduces and starts to thicken together.
- Pour in the pasta to heat through and top with fresh basil to serve.
