  • 1 pack Vegie Delights Savoury Mince 
  • 1 tbsp olive oil 
  • 1 pack (500g) wholemeal pasta  
  • 1/2 teaspoon black pepper 
  • 1 cup veggies of choice 
  • Optional garnish: fresh basil 
Cheesy Pumpkin Sauce
  • 2 cups (400g) pumpkin puree ?
  • 1/4 cup nutritional yeast 
  • 3 cloves garlic 
  • 3/4 cup (180ml) pasta water (or reduced salt vegetable stock) 
  • 2 tbsp olive oil 
  • 1/2 tsp sea salt, to taste 
  • 1/2 tsp black pepper 
  1. Heat the olive oil in a pan over medium high heat and cook the mince until golden brown. Set aside. 
  2. Cook pasta in well salted water according to package instructions. Make sure to reserve the water when you drain the pasta. 
  3. Sauce: Blend all of the ingredients into a blender on high speed until smooth. Taste and season further if needed. 
  4. To serve, add the sauce, veggies and pasta to the pan with the mince and stir to coat. Serve hot, and top with fresh basil leaves.
