  • 3 cups cooked brown rice 
  • 1 tsp sesame oil
  • 2 eggs, beaten
  • 1 pack of Vegie Delights™ Hot Dogs,diced
  • 1 medium carrot, peeled and diced
  • 2 spring onions, finely sliced
  • 3/4 cup frozen peas and corn mix
  • 1 tbsp (20ml) salt reduced soy sauce
  1. Heat half of the oil in a wok or large frypan over medium heat and pour in the egg. Swirl over the pan and cook the egg through, like a flat pancake.  Slide out of the pan onto a board and cut into thin strips. Set aside.
  2. Place the pan back on the heat and add the Vegie Delights™ HotDogs and cook for a few minutes. Add the carrot and spring onion and sauté for a few minutes. Add the remaining ingredients and stir to combine and heat through.  Add the egg strips back to the pan and toss together, ensuring the rice and ingredients are well mixed and heated through.
