  • 1 packet Vegie Delights™ Vegie Sausages
  • 3 Tbsp olive oil
  • 1 brown onion, grated or finely diced (130g)
  • 1 carrot, grated (120g)
  • 1/2 cup cooked quinoa
  • 1/4 cup sunflower seeds (50g)
  • 1/4 cup quick oats
  • 2 sheets reduced-fat puff pastry

To serve

  • Passata, or tomato sauce
  1. Use the tines of a fork to crumble Vegie Delights Sausages into small pieces.
  2. Drizzle olive oil into a large skillet over medium heat. Add onion and carrot and cook, stirring frequently, for 3 - 5 mins or until softened. Add sausage crumbles to onion mixture, and stir to combine.
  3. Turn off heat, add quinoa, sunflower seeds, and oats. Mix well, then set aside until cooled to room temperature.
  4. Preheat oven to 200°C. Line an oven tray with baking paper.
  5. Cut a sheet of puff pastry in half lengthwise. Spoon 1/4 of the sausage mixture along the closest long-edge of one pastry half. Brush far edge with water or soy milk, and roll to enclose filling. Seal edge. Repeat with remaining pastry half, and second pastry sheet.
  6. Cut each log into 8 even pieces. Place seam-side down on prepared tray and bake for 15-20 minutes, or until crisp and golden on top. Serve warm with passata or tomato sauce for dipping. Makes 32 party sausage rolls.
  • For a smaller sausage rolls, cut each log into 8 pieces,
  • If your pastry is very soft, pop the filled log back in the fridge for 10 mins before cutting.
