- 1 packet Vegie Delights™ Schnitzels
- 8 slices wholemeal sourdough bread, toasted
- 1 avocado, sliced or mashed
Slaw
- 3 stalks kale, centre remove and leaves thinly sliced
- 1/4 red cabbage, thinly sliced
- 3 spring onions, thinly sliced
- 1 handful parsley, chopped
- 2 medium carrots, grated
- 1 green apple, finely chopped
Dressing
- 1/3 cup reduced-fat Greek Yoghurt
- 1 1/2 Tbsp mayonnaise
- Juice of one lemon
- 1 tsp apple cider vinegar
Freshly ground black pepper, to taste
- Preheat oven to 180°C. Place the Vegie Delights Schnitzels on a baking paper lined tray. Bake for 10-12 minutes, turning once halfway through, until golden and crisp.
- Combine all slaw vegetables in a large bowl. In a small bowl, whisk together the dressing ingredients. Pour dressing over slaw, stir to evenly coat, and season to taste with pepper.
- Spread four slices of toasted sourdough with avocado. Top with coleslaw, warm schnitzel, and remaining slices of sourdough. Cut into squares or triangles to serve.
